Freezer Space: Breakfast

Days where I am on the go or Dave is late for work,  breakfast is such a huge hassle for us. This morning is a prime example. He was running behind and I knew if I didn’t force him he would skip breakfast altogether which isn’t good in the first place but add in he is working alone from 6:30 AM – 7:15 PM and I have no idea if he grabbed his lunch or not, yeah, he would starve before he would order delivery!!!!

I would have loved to say grab muffins from the freezer but truth is, the only muffins in there are my banana chocolate muffins. He doesn’t eat anything that remotely smells like a banana. I followed the freezing directions in my new freezer recipe book and am ready to tell you that I did a taste test.

According to them, bake your muffins or bread until it is just done. Wrap each muffin individually, then freeze in freezer bags. When you want to eat one, just pull it out and let it thaw 45 minutes or heat in the microwave.  It works. They do taste fresh!!

I am going a step farther. I am going to make some “healthy apple muffins” (I will share the recipe with you later) and freeze them as per the directions EXCEPT I will put 2 per small freezer bag with a tablespoon of butter, separately wrapped. When he is running late he can grab a bag and VOILA!! breakfast on the go.

Another thing we love to do is triple the batch of homemade waffles. Flash freeze them then throw them in a freezer bag for quick breakfasts. They are super for days I work and need to feed them at my parents or something.
