Option 1:

lettuce – washed and chopped
favorite dressing
Any veggies you have in your fridge – can use frozen peas if you heat through first
Add one of the following –
leftover chicken, cubed or shredded – marinated, BBQ, grilled, etc.
leftover burger or fry up ¼ pound(2 people)
leftover steak sliced thin
tuna fish, drained

Option 2:

lettuce – washed and chopped
Caesar Dressing
Grilled chicken – 1 or 2 breasts, cut into cubes
Parmesan if you have it

Option 3:
Lettuce
Corn – can use frozen, just  heat first
Salsa
Burger – ¼ pound(2 people)
onion
tomatoes
avocado/guacamole if you have it or can get avocado cheap
Cheese if it’s in the budget
Black beans – heat before using

TIP: Use stale bread to make croutons. Cut into cubes, dust with favorite herbs and spices, spray with cooking spray or toss lightly in oil and put in 400 degree oven. Turn occasionally until crispy and slightly brown.
