Poor Man’s Meals: Soup

Option 1:

Stone Soup

Throw everything in a pan or crockpot on low.

Any leftover or frozen veggies you have – chopped
1 onion, sliced or diced (medium to large)
1-3 cloves garlic, diced/ 1/2-1 teaspoon garlic powder
Cover with water or use meat broth if you have it
Add salt and pepper to taste (go light. You can always add more.)
Add spices – good options  –  chili powder, parsley, crushed red pepper
or –  curry powder
Cook together for several hours so flavors blend well or put in the crockpot for the day.

Option 2:

Boil 2 chicken breasts or legs
1 chopped onion (medium – large)
3 garlic cloves, diced (optional)
Dash of salt
Few grinds of the pepper mill or 1/4 teaspoon
in  4-8 cups water until chicken is falling off bone or breast is well done.
Shred the chicken and put back into pan of liquid.
Add a few handfuls of egg noodles.
Add ¼ – ½  bag of corn (16 oz.)
Cook until noodles are done.

Option 3:

Brown 1 lb. burger with 1 chopped onion (medium – large) and 3 cloves of garlic if you have it.)
Add –
several potatoes, diced
1-2 carrots, chopped
1-2 stalks celery, chopped
Fresh, canned or frozen – corn, peas, broccoli, beans, green beans, cauliflower, asparagus
Add water to cover and simmer until veggies are soft.

Option 4:
Pull out the crockpot!

1 can diced tomatoes
1 -2 carrots, chopped
1-3 potatoes, diced (opt.)
1 medium onion, chopped
1-2 stalks celery, chopped
up to 3 cloves garlic or ½ teaspoon garlic powder
Handful of lentils
1 Tablespoon curry powder or large pinch parsley, salt, pepper, chili powder and tiny pinch crushed red pepper
Water, vegetable or meat broth to cover.

Cook on high in crockpot 8-12 hours.

Option 5:

1 ham hock or ham bone
8 cups water
1 medium onion, diced or chopped
1-3 cloves garlic, diced or 1/2 teaspoon garlic powder
1/2 – 1 bag (16 oz.) fresh/frozen green beans
4-6 medium potatoes, diced in 1-2 inch cubes

Again, cook all in crockpot 6-8 hours or in a pan a few hours. The longer it cooks the more flavor you get from the ham bone or hock . Pull meat off the bone before serving.
