Ingredients

  • 2 cups all-purpose or unbleached flour
  • 3/4 cup sugar
  • 1 TBS. baking powder
  • 1/2 tsp. salt
  • 1 cup milk (dairy or non-dairy is fine)
  • 3 oz. red raspberries (approximately 1 cup unmashed)
  • 1 egg
  • 1/4 cup oil
  • 1 & 1/2 tsp. rosewater

Instructions

  1. Preheat oven to 400 degrees.
  2. Line cupcake tins with liners.
  3. Mix dry ingredients together.
  4. Mix wet ingredients in separate bowl (I measure everything right into a glass measuring cup.)
  5. Mash raspberries then mix into liquid mixture.
  6. Add wet ingredients to dry ingredients and incorporate just until mixed.
  7. Fill muffin tins ¾ full then bake 15-18 minutes.
  8. Makes 12-14 muffins
