Who just loves heating up the kitchen when it’s hot outside? Not this girl. I look for almost any chance I can to avoid turning my stove on in summer. *Cue a cute little snowman singing ‘In Summer‘.* So, when I got the mother of all zucchinis, weighing in at a glorious 6.6 pounds, I thought about beating the heat with my spiralizer. Since I’m not a huge sandwich eating fiend, I thought instantly of a fresh Zucchini Feta Salad I had eaten once and decided that I would share my quick and easy version of that salad.

Zucchini Feta Salad

Haha, quick and easy. If you’re a spiralizing pro it’s quick and easy. You could also just grate the zucchini if you want. It just won’t be quite the same. Once my spiralizing skills were taken pro, it was quick and easy. Before that, well, it’s a wonder that spiralizer didn’t take a quick flight out the window.

Making Zucchini Feta Salad

Growing up that big old zucchini would have elicited groans. I remember as a pastor’s kid, walking out the front door on a gorgeous summer morning and seeing THE BAG. You know, the bag everyone was afraid to drop off in broad daylight when you could SEE THEM. We were overrun with zucchini and tomatoes every summer from whatever little elves were dragging those bags to our front door.

As kids, I’m not sure if my mom would have been able to convince us to eat this Zucchini Feta Salad but I bet she would have loved this recipe back then. I’m not really sure what she ate for lunch to be honest with you. With 7 kids I don’t know that there was much time for lunch. Unlike my siblings and I, my 8 year old loves this salad. You know how there are some things you just want to keep all to yourself so you kind of hope they DON’T like it? No such luck here. It’s more like “Who can get to the bowl first finish the last bite of that zucchini salad?” in this house.

Zucchini Feta Salad

Ingredients

Scale
  • 4 cups spiralized zucchini (less if you shred it)
  • Juice of 1 lemon
  • 4 ounces feta, crumbled
  • 5 mint leaves, finely chopped
  • Dash of kosher sea salt
  • Dash of black pepper

Instructions

  1. Combine all ingredients.
  2. Enjoy!
