Wilted Spinach with Shallot

- 12 oz. spinach
- 1 shallot, minced
- 2 cloves garlic, minced
- 1 tablespoon butter or olive oil
- 1 small pinch of salt (optional)
- Melt butter/olive oil in pan over medium high heat.
- Add minced garlic and shallot and sauté until softened or caramelized, depending on taste.
- Add spinach and sauté just until wilted.
