How often do you need an easy meal you can throw together in no time? Busy days and exhausted evenings have me using every quick and easy recipe in my arsenal, while I still strive to keep our meals healthier and fresher.

Wilted Spinach with Caramelized Shallots - Real: The Kitchen and Beyond

Spinach is one of my favorite greens because it can go from salad to cooked veggie in no time. It is perfect on its own as a salad with strawberries, thrown into rice, or wilted down. I love to add a little butter, onion, and garlic to make it flavorful. It also just so happens to be the perfect backdrop for a gorgeous food photo and goes well with chicken, fish, or beef.

In an effort to cut down on our starch consumption I have been working on lowering the serving size of those starches by ‘fluffing’ them with nutrient dense produce. When I pair that favorite starch with a less favorite produce, like zucchini, squash, eggplant, or spinach, my family complains a little less and I still win. Instead of a protein, a starch, and a veggie, we end up with a protein, less starch, and 2 veggies. That, my friends, is winning in my book.

Wilted spinach is one of those dishes that goes together in under 10 minutes. Yes, you read that right. Throw some meat in the oven, then as it rests after cooking, you can have this side dish pulled together in no time, with no hassle.

Wilted Spinach with Shallot

Ingredients

Scale
  • 12 oz. spinach
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 tablespoon butter or olive oil
  • 1 small pinch of salt (optional)

Instructions

  1. Melt butter/olive oil in pan over medium high heat.
  2. Add minced garlic and shallot and sauté until softened or caramelized, depending on taste.
  3. Add spinach and sauté just until wilted.
