Whether you are getting kids out the door for school or starting a homeschool day, mornings are busy when you have kids in the house. Oftentimes, breakfast is just one more thing that has to happen when my kids are taking their time or wake up late. I still want to give my kids a wholesome breakfast as I rush them around but sometimes I am just short on time. These dried fruit granola breakfast cookies are just the thing when I need a wholesome breakfast to grab and go.

I received an assortment of dried fruit products from Mariani Premium Packing Company to create a delicious recipe that fills moms’ everyday need – give kids a breakfast we feel good about. The majority of people I polled said they were looking for something that was quick, easy, and still healthy to give the kids as they rushed out the door, with several suggesting a breakfast cookie. Our next homeschool co-op morning isn’t going to be quite so rushed with these in the house.

Cookies for breakfast? Basically, yes. Unlike your average cookie, these cookies are healthy, packed with deliciousness, and have just a bit of added sugar with sweetened dried cranberries and mini chocolate chips.  As my husband said, it’s homemade granola in cookie form.

An added bonus? They are egg-free and dairy-free for a spectacularly winning recipe. I have not tested them with gluten-free oats so I can’t say if that will work or not. Give it a try and let me know?

Dried Fruit Granola Breakfast Cookies

Ingredients

Scale
  • 4 cups rolled oats
  • 1/2 cup wheat germ
  • 1/2 cup water
  • 1/2 cup unsweetened applesauce
  • 1/4 cup Mariani Premium dried cranberries
  • 1/4 cup Mariani Premium dried apricots, diced (appr. 10)
  • 1/4 cup Mariani Premium dried apples, diced
  • 1/4 cup mini chocolate chips
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees.
  2. In mixer, mix together oats, wheat germ, salt, and cinnamon.
  3. Add water and applesauce. Mix until incorporated.
  4. Mix in fruit and chocolate chips.
  5. Using hands, shape into 1 inch balls, pressing together.
  6. Place onto cookie sheet, approximately 1/2 inch apart.
  7. Bake 12-15 minutes.
  8. A cookie for each hand is perfect.

    1. Thank you. I love finding ways to make healthy “bad breakfasts”. Okay, okay. I admit it. I love finding ways to make incredibly unhealthy breakfasts too – like the Mexican Hot Chocolate Waffles recipe I am plotting out.

  2. I’m all about breakfast cookies! Found you at Wonderful Wednesday. Gluten free oats are used the same as regular oats. The only difference is they haven’t been cross-contaminated with gluten grains. Pinned!

    1. What kid wouldn’t? Okay, okay. I know some adults who are game too. These are perfect on the go and I am guessing they will freeze beautifully if we can keep them long enough.
