This week’s Whole Foods CSA featured my favorite color – purple. Guess what I was thinking of when I saw mint and blackberries!

I’m thinking blackberry mint spa water, but I was only able to sneak a few because my kids have big plans for those blackberries and you are about to find out just what those plans are.
What We Got
- 2 Sunbeam Zucchini
- 1 eggplant
- 1 half pint blackberries
- 1 cantaloupe
- 1 bundle mint
- 1 bundle holy basil
- 1 container yellow wax beans
- 2 cucumbers
- 1 acorn squash
- 2 purple bell peppers
What We’re Making
Sunbeam zucchini – I spiralized 1 sunbeam zucchini and 1 kohlrabi then added juice from 1 lemon, salt and pepper for a side salad with salmon tacos. I am roasting the other sunbeam zucchini.
Eggplant – I’m roasting the eggplant with the sunbeam zucchini.
Mint – Mint is one of my favorite water flavorings. I used quite a bit of it for spa water with a few blackberries.
Cantaloupe – My son (9) loves cantaloupe ice cream so we are making it ourselves. He had an idea for a Blackalope Ice Cream (Get it? Jackalope? Blackberry and Cantaloupe = Blackalope). That recipe is coming in just a few days. We were too impatient to put it in the freezer to finish hardening so it melted really fast. So yummy!
Blackberries – Homemade Ice Cream and spa water
Acorn Squash – This stuffed acorn squash is an old but favorite dish. Maybe this time I can get some good pictures and I will definitely make the recipe more printable friendly. I cannot wait for this meal.
Purple Bell Peppers – I sliced these in thin rounds and made eggs in a nest for breakfast the other day. Did you know the purple turns green when they are heated?
Holy Basil – I used this in rice as a nice way to change up the simple bland starch.
Yellow Wax Beans – We washed these and ate them as a raw side veggie with hot dogs.
Cucumbers – We sliced these and my family had them with their picnic lunch when they played at the park while I worked. They all love cucumbers and I love that they help keep them hydrated.
