The kids and I love going to pick up our CSA share. We don’t know what we will get until we arrive and it kind of feels like opening up a treasure box. Well, we just picked up our Whole Foods CSA Week 4 and here’s what we got….

Whole Foods CSA Week 4

  • Sliced white mushrooms
  • Eggplant
  • Green kale
  • Tri-berry jam
  • Peaches
  • Jersey tomatoes
  • Bulls’ blood beets
  • 2 poblano peppers
  • 6 ears corn
  • Red cabbage

What are we making?

Mushrooms – I’ve been planning to make cream of mushroom soup for a few weeks now. This is the perfect time. We all love homemade cream of mushroom soup and my recipe is gluten-free. We might make Mushroom Broccoli Tuna Quinoa with it.

Eggplant – I love baba ghanoush but haven’t quite perfected a recipe yet. Okay, my recipe is quite far from perfected. I am going to work on it with this eggplant because baba ghanoush is a perfect lunchtime option. I like to eat it with hummus and pita.

Green kale – Kale Caesar! No, that is not a typo. I love kale in my Caesar salad. I just might make some parmesan crisps to go with it. This will be a good dinner when we don’t feel like cooking – Garlic Chicken and Apple Caesar Salad with kale. We could also make a salad with mixed greens, kale, red bell peppers, quinoa, cheddar, and balsamic dressing.

Tri berry jam – aside from jam and toast, I think I am going to turn this jam into a fruit tart. Mmm, mango berry tarts? Stay tuned!

Bull’s blood beets – Not going to lie, it sounds kind of gross with the word blood in it but I do love beets. I am planning to roast these with just a bit of pepper and vulcan fire salt.  Spicy roasted beets? It’s gotta be good, right?

Peaches – Well, I would have made a peach berry tart but my family already claimed these for eating.

Jersey tomatoes – a little salt, a little pepper, and a splash of balsamic vinegar. That’s all, she wrote.

Poblano peppers – roasted poblano, corn, and black bean salsa is sounding pretty good right now. I am going to play around until I find the perfect combination then share the recipe with you.

Red cabbage – My husband has been wanting me to make some of this zesty lime coleslaw again. Happy to oblige! This red cabbage will be perfect. If you are looking for a zippy slaw that isn’t mayo or cream based, you need to try this recipe.
