Sunday – roasted brussel spouts, roasted red potato wedges, celery and carrot sticks (See a theme?)
Monday – chicken enchiladas
Tuesday – vegetable and rice noodle stirfry – Did you know you can marinate your veggies like meat?
Wednesday – homemade pasta baked with parmesan portobello cream sauce and tomato sauce, broccoli or
some other vegetable
Thursday – baja chipotle chicken, rice, veggie
Friday – some sort of soup
