Shrimp marinated in a light tropical marinade with pineapple juice, Kikkoman® Soy Sauce, and agave syrup then grilled on skewers with chunks of fresh pineapple, red onion, and bell peppers.
Kikkoman® Soy Sauce is my go-to soy sauce so I am excited to partner with them on this summer grilling recipe that is perfect for 4th of July or any time. Tropical shrimp and pineapple kebabs are easy to make and dinner will be ready in no time when you serve them over rice or a bed of lettuce. Add a drizzle of pineapple juice or a light vinaigrette to finish the dish and you’ll still have plenty of time to enjoy a summer evening outdoors with friends before the fireworks or fireflies come out.
Speaking of 4th of July, if you want to host a party but your budget can’t handle the protein for that size crowd, ask people to bring their own protein and a dish to share. You can whip up a few marinades, like this tropical marinade that is perfect for shrimp or chicken, or Kikkoman® Teriyaki Marinade and Sauce for steak, then people can marinate their protein before grilling it without hauling along their own seasonings and marinades. This takes some of the stress out of hosting a summer party but allows you to still be the hostess with the mostest.
Not only is Kikkoman® Soy Sauce my go-to soy sauce, but I like to use it in place of salt in marinades as it adds more “umami”, another level of flavor that balances out marinades so well. If you are looking for something with less sodium you can use Kikkoman® Less Sodium Soy Sauce, or if you need to use gluten-free sauces, Kikkoman® also offers a variety of gluten-free products, which are certified by the Gluten Intolerance Group (GIG).

Made with simple ingredients that were easy to find at Walmart when I was buying party supplies (yay summer parties!), this tropical pineapple marinade adds a light flavor without overwhelming the delicate shrimp meat. While the recipe calls for crushed red pepper flakes and optional ground red pepper, you will be surprised to find the finished dish isn’t spicy. If you want to bring more heat to the dish I recommend sprinkling the ground red pepper onto the kebabs before you put them on the grill.
Don’t go far! Shrimp grills in less than 10 minutes and you don’t want to overcook them. Any vegetables you use will still have a little crunch while the shrimp will be perfectly cooked and pineapple softened just the right amount. I recommend a forkful of shrimp, veggies, and pineapple for an explosion of flavors no summer grilling party should be without.

Ingredients
Kebabs
- 1.5 – 2 lb. shrimp, fresh or thawed and rinsed, peeled, and de-veined (recommended, x-large or jumbo sized shrimp)
- 1 pineapple, peeled, cored, and cut in approximately 1 inch cubes*
- 1 & 1/2 red onions, cut in approx. 1 inch cubes (optional)
- 1 & 1/2 green bell peppers, cut in approx. 1 inch cubes (optional)
Tropical Pineapple Marinade
- 2 c. pineapple juice
- 1/4 c. Kikkoman® Soy Sauce
- 1/4 c. agave syrup
- 2 TBS. oil
- 1 tsp. minced garlic
- 1/2 tsp. crushed red pepper flakes
- 1/4 tsp. ground red pepper (optional)
Instructions
- Mix liquid marinade ingredients together then whisk in garlic and crushed pepper flakes. If you want a spicier dish, sprinkle optional red pepper over prepared skewers before grilling.
- Add shrimp to marinade, stir to coat, and cover to marinate in refrigerator for 30 minutes to an hour. **
- Heat grill on medium heat 15 minutes before putting kebabs on grill.
- While shrimp is marinating, prepare pineapple, peppers, and onions.
- Once shrimp has marinated, alternate onion, pepper, and pineapple cubes with shrimp, placing on skewers in whatever order you wish.
- Grill each side for 3 minutes, keeping in mind that time starts when you put the first one on the grill since it can take a minute or so to place them all and then flip them over. I recommend using a silicone or leather glove to flip each skewer.
- Serve!
Notes
*Will have leftover pineapple.
**If you are in a hurry you can marinate for 15 minutes and still have a tasty dish. Marinating 30 minutes – an hour lets the flavor absorb better without breaking down the shrimp meat. The acid in the marinade can break down shrimp if left to marinade too long.
