I adapted a muffin recipe to make what turned out to be my “kind of a scone”. Some may say they are too sweet to be a scone but they need a name so this is going to have to work for now. See this post for an updated recipe, my Apple Oat Drop Biscuits.
2 cups stone ground whole wheat flour
2 cups rolled oats
1/2 teaspoon salt
2 Tablespoons baking powder
1/2 cup raw sugar
2 cups chopped apple
2 teaspoons cinnamon
1 1/2 cups unsweetened applesauce
Preheat oven to 425.
Mix all dry ingredients.
Add chopped apple and mix together.
Add eggs and applesauce and mix until all ingredients are moistened.
Drop by large spoonfuls onto greased tray and bake approximately 15 minutes.
Wrap well and place in freezer safe bag in the freezer for breakfast on the run.
