Turn those Thanksgiving (or Christmas coming) Leftovers into dinner. I love leftovers, especially holiday leftovers. There are so many possibilities but one of the easiest is SOUP. It’s my Thanksgiving Soup.You can do this any time you have a roasted chicken or turkey though. If you had ham, change it to a Ham Soup.
Break down the turkey carcass and leftover meat so it all fits in the crock pot. Add the turkey drippings, gravy, and 4-6 cps of water and cook on high through the night.
In the morning, pull out all the bones, fat, skin, any junk.
Add mashed potatoes, sweet potatoes, leftover vegetables (plain or casseroles), if you need more in the soup – add any frozen/fresh veggies you like – carrots, celery, peas, corn, green beans if there is no leftover green bean casserole, some chopped onion, diced garlic, and 2 bay leaves (opt.).
Slow cook it on low for the day and you have a savory yummy dinner. Pair with leftover rolls or bread and you have re-purposed Thanksgiving Dinner and made cooking easy for yourself after all the craziness is over.
*Generally I just add around a cup of each frozen vegetable IF I need to beef the soup up.
