Southwest Chili Dip

Southwestern Chili Dip #slowcooked to perfection in my new #Calphalon 7 quart slow cooker. Enough to spicy deliciousness to feed a crowd. #pinterestfoodies

Ingredients

  • 2 tsp. olive oil
  • 1/2 large sweet onion, diced
  • 1 poblano, roasted, peeled, and chopped
  • 3 cloves of garlic, diced
  • 1 tsp. chili powder
  • 1 tsp. ground coriander
  • 1/2 tsp. cumin
  • 1/41/2 tsp. salt
  • 1 lb. lean ground turkey
  • 1 can (16 oz.)  black beans, drained and rinsed*
  • 2 cups picante sauce
  • 4 oz. pepper jack cheese, shredded

Instructions

  1. Heat oil in pan and add diced onion, garlic and poblano.
  2. Saute until onions are translucent then add spices.
  3. Add ground turkey and brown, chopping turkey into small pieces.
  4. Add to slow cooker.
  5. Mix in 1 can of drained and rinsed black beans and 2 cups picante sauce.
  6. Mix together and spread shredded pepper jack across top evenly.
  7. Slow cook on low 3 hours or high for 30 minutes, then 1.5 hours on low.
  8. Serve with tortilla chips.

Notes

* or 1 and 1/2 cups homemade black beans, drained
