Apparently the Super Bowl and Oreos go together. Shock to me. How about you? We went to a Super Bowl party and I needed to take a dessert. No problem. I love making desserts. The problem that comes in is what dessert should I make? Really, the sky is the limit when it comes to me and desserts. You never know what I will bring. It might be brownies. It might be cheesecake.

I decided I wanted to make cupcakes. But what cupcakes? I looked at at least 50 recipes (Really.) I saw bacon and chive cupcakes and buffalo wing cupcakes – complete with a REAL hot wing topper. I just couldn’t quite get into making those even though they sounded fun. They looked kind of gross with that hot wing perched up on top.

I kept coming back to the Oreos in my cabinet and cookies and cream cupcakes. How about two desserts mixed into one? The best recipe I came across was from Bakerella. I am just linking the recipe because it was perfect as it was and I don’t mess with perfection…usually. Highlight “Bakerella” in the last sentence to get there. I opted for the “whole cookie in the bottom” route. You will see what I mean when you check out the recipe. I also skipped her icing recipe and made my own.

The icing itself was like Oreo filling! It literally melts in your mouth because of the coconut oil I used. I wish I could give you the recipe but I can’t. When it comes to icing I dump a bit of 10x sugar in, add a bit of Coconut Oil (I mix the oil by itself for a bit first because at this time of year it is a solid and rather lumpy), add heavy cream and a splash of vanilla and mix away. I add a bit more of any of the above ingredients to get the texture and taste I want.

Frost the cupcakes. Dust the top with crumbled cookie crumbs. Refrigerate until you serve since the coconut oil gets soft. Try not to eat them all.

Makes approximately 18 cupcakes.
