Strawberry Shortcake Flop

I had to throw a cake together in a hurry the other morning. It was 7 AM and we needed to leave at 8 AM and I had forgotten I needed to make a cake. Strawberry shortcake to the rescue…..maybe.

Here is the recipe I used – Strawberry Shortcake . Quite easy. It would work for any one. I used organic unbleached flour, raw sugar,  and coconut oil replaced the shortening. I doubled it since we needed to feed more than 5 people.

Grabbed a container of cool whip and strawberries and headed out. I ended up not feeling well so I didn’t eat any. I found out quite by accident that apparently the shortcake wasn’t any good. In fact, it was horrible. It tasted like too much baking powder. Really, a rookie mistake I don’t make, ha.

Well, I thought back and wouldn’t you know, in my doubling I thought tablespoons instead of teaspoons and instead of 8 teaspoons ( 2 tablespoons, 2 teaspoons) of baking powder, I put EIGHT tablespoons baking powder. ICK!!!

Now I’m in the mood for strawberry shortcake. I don’t think I will forget to measure right this time though. It just goes to show, you don’t need to be a rookie to make a mistake.
