This is it! This Friday the One Day Deal at Whole Foods is on rotisserie chickens. Normally priced at $8.99 they will be on sale for $5. That’s pretty awesome in my book and I intend to beat you all there. Check out this post for the challenge I made for myself and how I pulled off my Whole Foods budget meals and got 5+ dinners for under $65. Meal #2 was Strawberry Chicken Kale Salad Sandwiches and we all loved them.
In case you are wondering why I am sharing Meal #2 first, it’s because Strawberry Kale Chicken Salad was secretly my favorite. I planned on making our best corn on the cob recipe EVER, but with baby carrots and these hearty sandwiches, we didn’t need anything else.
One of the secrets to these sandwiches is to buy a hearty bread. We really enjoy ciabatta bread and I was happy to be able to grab a smaller loaf for a little cheaper. I added strawberries in place of cranberries because there were still some fresh and juicy looking strawberries. I know this strawberry season is rapidly drawing to a close and I want to draw out every last second. Also, instead of adding lettuce to the sandwiches, I added finely chopped kale. The kale added a nice taste and texture and I will be adding it to my tuna and chicken salads quite often from now on.
This chicken salad would be perfect on little tea sandwiches for a brunch or luncheon, or put on ice and taken for a last minute trip to the beach. Just as I am dragging out the last days of strawberries, I’m also dragging out the last days of summer. We had such a great time at the shore this weekend and I am sad the season is ending before we can squeeze a few more days in.

Ingredients
- 2 cups roast chicken, finely chopped
- 1/2 cup kale, finely chopped
- 1/2 cup strawberries, finely diced
- 6 tablespoons mayonnaise
- 1/8 cup celery, finely diced
- Salt and pepper to taste
Instructions
- Mix all ingredients together.
- Serve on a hearty bread.
I never thought to make this combination! It sounds totally delish! It’s perfect for back to school lunches too!
