Sticking to the Budget: Weekly Menu

It is as usual, a busy week. Thursdays are now longer with a co-op we are in. Last week I wasn’t so prepared for that and ended up rushing out to buy something to supplement the kids’ snack.  So, this week I am adding in my lunch menu.
MONDAY

Breakfast -yogurt and fruit. I planned to sprinkle homemade granola on top of the yogurt and forgot

Lunch – chocolate banana muffins (whole wheat and they love them), baby carrots, green pepper with cream
cheese, and strawberries

Dinner – chicken curry over brown rice, served with steamed broccoli

TUESDAY (I work so they get an “easy lunch”)

Breakfast – chocolate banana muffins and fruit

Lunch – pizza bites (one of these days I am going to make my own but until I have time…), carrots, mandarin
oranges

Dinner – beef, barley, and cabbage soup with cornbread

WEDNESDAY

Breakfast – oatmeal

Lunch – leftover soup

Dinner – homemade pasta and sauce with steamed broccoli

THURSDAY

Breakfast – Baked oatmeal and fruit

Lunch – sandwiches, carrots, granola bars, grapes

Dinner – on the road. Trying to decide if I will make something “to go”. I might make english muffin pizzas since I made english muffins Saturday.
