Spring came out to play but winter has come back to taunt us. I’m not really sure how cold it is actually going to get but ‘high of 60, low of 22’ doesn’t sound so fun to me. Instead of the current craze of Shamrock Shakes, which I completely adore, by the way, I am in the mood for a hot drink. Welcome to my world of St. Patrick’s Day inspired Mint Hot Cocoa.

Mint Hot Cocoa

I started with my hot cocoa recipe, skipping the vanilla, cinnamon, and chili powder. I finished with a baseball sized scoop of rich and creamy mint chocolate chip ice cream in place of whipped cream. I love mint chocolate chip ice cream. My husband does not. With that in mind I rarely ever buy it but since I used it for my St. Patrick’s Day Chocolate Mint Beer Float, it’s been sitting in the freezer screaming my name. I know, it’s a scary thing. Who wants a carton screaming so frantically from the freezer? I finally answered its cry for freedom.

Mint Hot Cocoa

Oh mint hot cocoa, where have you been all my life? Rich, chocolatey, slightly minty, amazing, and it didn’t come from a hot cocoa mix packet. Winner! So, if your St. Patrick’s Day is slightly colder than you wish,  make your own mint hot cocoa and get cozy for the evening.

  1. I think you may have set me up for a raise. My boss craves hot chocolate—–and loves whipped cream, ice cream, cheesecake. You are getting my drift. She also is a size 4. Sigh.
    Guess what I am fixing at work tomorrow.
