Peas add a little color and nutritional boost to a kid favorite – ranch dip, and I must admit to feeling a bit of success at coming up with a pea recipe my pea hating kid will eat without a fight.

Easy Ranch Dip Recipe Secret Veggie

Today’s ranch dip recipe is also a great example of finding new ways to get produce in your family’s diet on a tight budget. Even though it’s just a bit of produce, every bite helps and most kids think dip with veggies is fun so you have that going for you too.

Earlier this week in my weekly produce resource I promised you a pea recipe that hides peas well. This green ranch dip does just that. My pea hater said it tastes a lot like Chick-fil-A’s avocado lime dressing and my husband said it tastes like my avocado ranch dressing. That’s good because the whole family loves the avocado ranch dressing and if you’ve seen the price of avocados these days, it’s just not happening. I explain some of the reasons why at the bottom of this post.*

Easy Ranch Dip Recipe Secret Veggie Ingredients

Living on a tight food budget means we simply don’t buy things some people take for granted. Dips are an “extra” we used to buy for parties until I saw how easy it is to make my own. Reading the ingredient label of one we used to buy helped me along with that decision. Ever since I made that first batch of avocado ranch dressing that can also be used as a dip, we’ve made our own, including my favorite French onion dip.

Secret Veggie Ranch Dip

  • Total Time: 7 minutes
  • Yield: 12 ounces 1x

Ingredients

Scale
  • 1 cup sour cream
  • 1/2 cup frozen peas + 1 teaspoon water
  • Juice from 1/2 lime
  • 1 medium clove garlic/1 teaspoon fresh garlic, minced/1/2 teaspoon dried minced garlic
  • 1 teaspoon parsley
  • 1 teaspoon green onion, minced or 1/2 teaspoon dried green onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Mix peas with 1 teaspoon water and all dried herbs.
  2. While peas are heating, mince garlic if needed and finely chop green onion. (If using dried, they go in with the peas.)
  3. After peas are heated, let cool a few minutes then blend together with sour cream, lime juice, and any fresh herbs.
  4. Serve immediately or chill for a few hours to incorporate all flavors better.

NOTE: I heat the peas in a microwave safe glass dish with a small plate over top for about a minute. Then I check to make sure they are heated through.

*Note: Avocados aren’t in season here in the states and when I was at Fresh Summit 2016 we spoke with a produce trucker on this side of the border who said the drug cartels are burning trucks of avocados on the other side of the border. It’s a scary thing to think about and goes to show you when prices go up we don’t always know why, but there are repercussions far beyond our grocery budgets.
