Growing up there was a dish I “made up” and we called it Spanish Rice. I have no idea why. It was beef, rice, onions, peppers, and tomato sauce all in a cast iron skillet. Maybe a bit more Italian?

Anyway, my family really liked it ( parents and siblings). I tried to recreate it  and it didn’t taste like I remembered.  It just didn’t “get” me, you know what I mean?

Here’s my spin on it.

1 lb. ground meat, fried with-
1 medium onion, diced
1 sweet pepper, chopped
2 cloves garlic, diced
Rice – cooked, amount your family eats
1 jar sauce – I am trying my frozen stewed tomatoes to see what I think
1 package shredded cheese, I prefer cheddar, or mexican blend

Mix meat, rice, sauce, and half of cheese.
Put in casserole dish and cover with remaining cheese.
Bake at 350 until heated through and cheese is melted.
Serve with a veggie or salad on the side.

You can prep everything ahead of time and stick it in the fridge to pop in the oven or as a freezer meal for a busy day.
