Are you still with me in this meal planning thing? I am finding I don’t get so excited about a quick easy meal plan. Crazy, considering it helps me out so much. I stay on track with mealtime so much better. Since I am feeling so ho-hum about it I decided I really need to buckle down and make mealtime fun while keeping it easy.
Many times we turn to cans and boxes, thinking they make life easier and quicker. They really don’t. If you break it down you take just about the same amount of time to make a delicious and healthy meal that uses a lot less salt. Our country is in health trouble and we need all the help we can get to be healthier. Cutting sodium is a great way to take steps, but not just by getting “low sodium” processed food. Instead, find ways to make it yourself.
One way I cut the can is to make my own cream soups. I’ve already shared my homemade cream of chicken soup and cream of mushroom soup with you. Next up we are going to be tackling cream of celery soup and cream of potato soup. These homemade cream soups are great because you can make a big batch and throw some in the freezer for another day.
This week we are going to incorporate some of these homemade cream soup into our mealtimes and I will share those recipes with you over the next few weeks. Let’s get meal planning.

Day 3: Creamy Chicken Rice Casserole and steamed broccoli
Day 4: Egg Frittata with Asparagus and Cheese
Day 5: Meatball Hoagies with a side salad {Use that slow cooker}
Day 6: Savory Vegetable Soup with crusty bread
Day 7: Grilled Cheese and Tomato Basil Soup
