This week we are using our slow cooker and prep ahead to make quick easy meals. Take a little time at the beginning of the week or during one dinner prep to make the rest of your week easier.
Part of quick easy meal planning is seeing how many meals you can make from one. One of my favorite ways to do this is with a rotisserie chicken. You can either buy your rotisserie chicken premade or make your own roast chicken. I am all for making your own because, well, healthier.
Quick and Easy Meal Plan 2
Day 1: Slow Cooker Chicken – 1 whole chicken, 1 potato per person, 1 whole carrot per person, 1 stalk celery, 1 onion, 3 cloves garlic, salt, pepper, parsley to taste. Put whole chicken in slow cooker. Cube potatoes. Dice onion, carrots, and celery. Mince garlic. Add all ingredients to slow cooker. Pour 1 cup water over chicken and add salt, pepper, and parsley to taste (approximately 1 teaspoon salt, 1/4 teaspoon pepper, and 1 teaspoon parsley). Slow cook on low for 6-8 hours. Prep extra carrots, onions, garlic, and celery for tomorrow’s soup and Wednesday’s salad.
Day 2: Chicken, Bean, and Veggie Soup and JalapeƱo Cornbread Cakes – Use leftover liquid and chicken from Slow Cooker Chicken for base.
Day 3: Sausage, Potatoes, and Peas
Day 4: Dinner Salad with Steak and Barley
Day 5: Haystacks – layer cooked rice, hamburger, cheese, lettuce, salsa, and crushed nacho chips (make extra rice for Saturday)
Day 6: Chicken and Black Bean Burritos – this is where having chicken taco meat in the freezer comes in handy
Day 7: Broiled Salmon, rice, and steamed lemony green beans
Make a double or triple batch of oatmeal and package in single serve containers. Top with different flavor combinations for something new every morning.
