Sure, you can eat pumpkin pie for breakast. But Pumpkin Pie Baked Oatmeal is even easier to make (no crust!) and has all the flavors of pumpkin pie.
Autumn has always been my least favorite season, but I do love the colors and flavors of the season. This spin on a family favorite dessert – pumpkin pie – is the perfect breakfast for chilly autumn days but I bet you’re going to want to roast a pumpkin so you can freeze the puree and enjoy this oatmeal recipe all year long.
Some of my favorite things about autumn are the colorful leaves and the sound they make on crisp chilly days when the breeze blows. Bundled up around a bonfire, roasting marshmallows as the cozy scent of wood smoke drifts throughout the neighborhood is another favorite. But my favorite smells of all are the scent of autumn spices toasting for homemade chai or pumpkin pie baked oatmeal baking.
Pumpkin pie baked oatmeal is thick and custard-like from the pumpkin puree, sweetened condensed milk, and eggs. It has all the spices you generally add to pumpkin pie but if you don’t have them on hand you can also easily skip the individual spices and use 2 teaspoons pumpkin pie spice instead.

- Prep Time: 10 minutes
- Cook Time: 1 hour
- Total Time: 1 hour 10 minutes
- Yield: 8 1x
Ingredients
- 3 cups rolled oats
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- 1/8 tsp. nutmeg
- 4 cups pumpkin puree
- 3 large eggs, beaten
- 1 (14 oz.) can sweetened condensed milk
- 1 tsp. vanilla extract
Instructions
- Preheat oven to 350°F.
- Grease 10 x 10 or 13 x 9 baking dish.
- Mix together rolled oats and spices in a bowl.
- Mix pumpkin, eggs, sweetened condensed milk, and vanilla together.
- Mix dry ingredients into wet ingredients.
- Pour into pan.
- Bake approximately 1 hour or until firm.*
Notes
*If baking in 9 x 13 dish, will take approximately 35-45 minutes.

Haha. Baked oatmeal was my way of getting my kids to start eating it. Now they eat regular oatmeal with just a bit of sugar and milk sometimes.
