Poor Man’s Meals: Egg Noodles

I  don’t know why but I love egg noodles. Cook them, add butter, salt and pepper and I am a happy girl. Besides mashed potatoes they are my favorite comfort food.

Here are a few “poor man’s recipes” using egg noodles.

Option 1:

Make 1/2 – 1 package of egg noodles.
Mix 1 can tuna, 1 can mushroom soup, and 1 soup can of milk together. Cook until heated and serve over top the egg noodles OR mix them together and sprinkle top with breadcrumbs and bake at 350 until top is lightly crispy.  You can also add peas or broccoli into the casserole before baking to get your veggies. If you use a whole bag of egg noodles and there are two of you, that’s 2 dinners or leftovers for lunch to go.

Option 2

Make 1/2 – 1 package egg noodles
Fry 1/2 – 1 lb. burger (depending how many noodles you made)
Pour 1 can mushroom soup  and 1 soup can milk into burger.  Heat through and serve over noodles. Serve your favorite veggie on the side.

Option 3

Make egg noodles – add butter
Make hamburgers, using 1/4 pound per burger
Serve a veggie on the side – fresh baby carrots, broccoli – fresh or steamed, green beans if they are on sale

Option 4

Make egg noodles

Take chicken breast and cut it into 2 pieces, so you have thin “patty type” pieces or tenders. Toss the chicken in mixture of flour, 1 T. parsley, 1 teaspoon garlic powder, 1/4 teaspoon pepper, 1/4 teaspoon salt, dash chili powder and paprika (Omit any spices you wish). Pan fry or oven bake at 350 until cooked through.  Squeeze some fresh lemon over if you have it.

Add some fresh veggies.
