One of my favorite quick, easy, and fresh salsa recipes is Pineapple Mango Salsa. It takes some of my favorite flavors and combines them for a fun and colorful alternative to the traditional tomato based salsa, which I love as well. It’s delicious on crostini or with tortilla chips, on tacos or by the spoonful.
Today is my dad’s 60th birthday party so I am taking my home canned tomato salsa and this pineapple mango salsa. I was hoping to make my own tortilla chips because, well, they are so good, but time ran away from me so Mission Tortilla Chips it is. I LOVE Mission Tortilla Chips.

Ingredients
Pineapple Mango Salsa
- 1 medium fresh pineapple, peeled, cored, and diced
- 1 mango, diced
- 1/2 cup tomato, diced
- 1 small to medium jalapeno, minced – for no heat slice out vein and all seeds
- 2 – 3 tablespoons red onion, minced
- Juice from 1 lime
- 1 tablespoon fresh cilantro, optional
- Pinch of salt
Instructions
- Mix together all ingredients.
- Chill for a few hours so the flavors combine.
- Serve with pita or tortilla chips.
