Fresh, juicy peaches sliced and baked under dollops of a biscuit-style topping, peach cobbler is one of my absolute favorite desserts to make as late summer creeps toward fall and back-to-school.

Peaches are my absolute favorite summer fruit, but they are often challenging to find at the perfect ripeness here in New England. When I can get them, peach cobbler is at the top of my list for ways to use them, and it’s such an easy dessert.
Pop it in the oven just as you sit down to dinner, and it will be hot out of the oven for dessert time. Add a scoop of vanilla ice cream and serve immediately.
Do you really only put a little sugar in it?
Yes! Peaches are naturally sweet, so you do not need a lot of sugar. You could skip the sugar in the topping if you like, but I find the biscuity topping needs just a touch of sweetener. Since it calls for so little sweetener, you can substitute another sweetener such as coconut sugar, honey, or maple syrup without needing to adjust the recipe.
Can you use canned or frozen peaches?
You would need to adjust the recipe and include a thickener in the peach layer to account for the difference in liquid in both frozen and canned peaches, so I would not try to substitute unless you are an expert baker and already have an idea of how to adapt between fresh, frozen, and canned fruit.
Can you use cake mix for the cobbler topping?
Some recipes use a cake mix for cobbler topping. I have tried it this way in the past, but find it to be super sweet. It also has ingredients you just don’t need to use. Plus, the ingredients for the biscuit topping are super simple pantry staple ingredients that can be used in so many recipes. It’s cheaper to make this way than buying a cake mix.
Easy Flavor Adaptations
Here are some quick and easy ways you can change up the flavor of your peach cobbler with very little additional effort:
- Stir 1 teaspoon ground cinnamon into the peaches.
- Stir 1 teaspoon vanilla extract into the peaches.
- Stir 1 tablespoon lemon juice into the peaches.
- Stir 1 teaspoon ground cardamom, 1/2 teaspoon ground ginger, 1/8 teaspoon ground clove, and 1/8 teaspoon ground nutmeg into the peaches for a chai flavored cobbler

Ingredients
- 6 cups peeled and sliced peaches
- 1 cup whole wheat flour
- 1 & 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 Tablespoon honey (or sugar)
- 3 Tablespoons coconut oil (or shortening)
- 1/2 cup milk (fat free)
Instructions
- Preheat oven to 400F.
- Put peaches in baking dish – 9×9 is a good size.
- Mix together flour, baking powder, and salt.
- Mix in oil/shortening and honey/sugar.
- Add milk, stirring until just mixed.
- Spread dough across top. Will not completely cover.
- Bake for approximately 30 minutes or until crust is a light brown.
- Serve plain or with whipped cream or ice cream.
