With just 3 ingredients, Five Spice Carrot Rice is a quick prep easy meal as it takes less than 20 minutes to make and is a kid-friendly dish – as long as your kid likes carrots. Please note this is not the carrot rice recipe that is a combination of rice and carrots.

I love how colorful it makes a plate and in the wintertime I will take all the color I can get. The bright orange of the carrots really chases away winter drear, and the flavor is just right for this simple ginger garlic beef and broccoli recipe.

How to Make Carrot Rice

If you have a food processor or blender like a Ninja system, carrot rice is super easy to make! Chunk carrots into 2-3 inch pieces and throw them in the blender or processor then process on the pulse setting until pieces are rice sized or smaller but not so long it starts to juice them or turn them to a pulp. 

How to Cook Carrot Rice

There are several ways you can cook carrot rice. You can either use water or oil.

Cooking with oil

You’ll heat oil in a pan and cook the riced carrot covered for a bit then uncovered to finish. It’s really that easy. With this method you can slightly brown the rice to add a caramelized flavor to it.

Cooking with water

If you prefer not to use oil, you can make this with just water. You’ll find the exact steps in the recipe below. Watch it closely as the carrot rice can burn if the water dries up before it’s fully cooked.

Ingredients

Scale
  • 1 lb. carrots
  • 2 Tbsp. water
  • 1 Tbsp. olive oil (optional)
  • 1 Tbsp. five spice powder

Instructions

Cook with Oil Method

  1. Grate or process carrots.
  2. Heat pan over medium-high heat with a tablespoon oil.
  3. Add carrots to pan.
  4. Sprinkle five spice evenly over carrots and mix in.
  5. Cover and cook, stirring frequently, until carrots get a little soft, about 5 minutes.
  6. Remove lid and cook another 1-2 minutes, stirring frequently.

Cook with Water Method

  1. Grate or process carrots.
  2. Heat pan over medium-high heat.
  3. Add carrots and water to pan.
  4. Sprinkle five spice evenly over carrots and mix in.
  5. Cover and cook, stirring frequently, until carrots get a little soft, about 5 minutes.
  6. Remove lid and cook another 1-2 minutes, stirring frequently.

    1. You can get it at Whole Foods or many other grocery stores BUT here are the ingredients in order – cinnamon, fennel, cloves, star anise, and white pepper.
