Eating down the freezer is hard when you are solo parenting, packing up a house, wrapping up a homeschool year, and trying to buy a house remote.

My meal plans have been made but it’s been really hard to follow them when I just want to curl up somewhere at the end of the day. I’ve been suffering through quite a few 12:30PM – 4:00/4:30 AM nights because I just can’t sleep.

This week I was a bit alarmed at just how much is left on my Operation: Eat Down the Freezer list and knew something had to change. Well, between that and the fact that we are eating hodge podge meals.

I’ve been planning to make a few meals for the last few days and it just didn’t make the top of my list until I found out a sister was coming who enjoys cooking but not the other house moving type jobs. Today she got some of my meal prep started for me and between the 2 of us we made 2 breakfasts and 4 dinners.

Now I just need to get a few meals ready and in the freezer to take with us to New Hampshire next week and to have prepped for the week we move.

  • Sausage, Potato, and Carrot Soup / tater tots and fish fillets for the kids
  • Leftovers
  • Sandwiches

Dinner Meal Plan

  • Tuna Noodle Casserole
  • Baked Ziti (is it baked ziti with no ricotta?) – made
  • Tuna Lemon Herb and Garbanzo Bean Casserole (with egg noodles), asparagus – made
  • Zesty Peach BBQ Chicken Drumsticks, rice, and broccoli – made
  • Meatloaf, rice, and steamed honey glazed carrots – made all but the carrots
  • Beef roast with carrots, celery, and lentils
  • Mac and cheese and veggies
