This week is just a little bit off track. Thankfully, my LA-Philly red eye didn’t completely destroy me for a week like it did earlier this month. However, my kids had donuts twice this week and  I wasn’t cooking Monday night. My oldest son came to the rescue and kept Operation: Eat Down the Freezer on track for the evening.

So yes, it’s already Friday and I haven’t posted this week’s meal plan. From Monday being shot to whitewater rafting on Tuesday, Wednesday was catch up on work and then turned into pack some of this house day. Hey, when someone offers to help you don’t say no. Finally, here we are – Operation: Eat Down the Freezer Meal Plan 2 and 3 since it’s already Saturday.

Breakfast Meal Plan

  1. Donuts/bagels and fruit
  2. Donuts and fruit (Yes, donuts 2 days in a row. Oops!)
  3. Fried eggs and toast
  4. Oatmeal with raisins
  5. Smoothies and fried eggs
  6. Waffles, fruit, and whipped cream

Lunch Meal Plan

  1. PB&J Sandwiches, baby carrots, yogurt (I had tacos)
  2. Turkey Sandwiches, cookies, and cheesestix (Herr’s Cheetos) – Whitewater rafting lunch
  3. Sandwiches, yogurt, pretzels, clementines
  4. Cheese and lettuce sandwiches, yogurt, granola bar, celery sticks
  5. Ham Sandwiches, tortilla chips and guacamole, veggie sticks
  6. Soup and easy garlic bread

Dinner Meal Plan

  1. I was out of town, husband worked, and the kids were with family.
  2. Baked Pasta with hamburger, ricotta, sauce, and cheddar – my son made dinner while I attempted to stay awake. He rocked.
  3. They had leftovers and I had Boston Market. I ate and fell asleep shortly afterward.
  4. Tuna and mushroom with pasta and peas
  5. Dinner out (late birthday dinner)
  6. Beef Stir Fry
  7. BBQ Chicken Drumsticks, grilled potatoes, veggie stir

Breakfast Meal Plan

  1. Cranberry Clementine Baked Oatmeal
  2. Scrambled eggs with broccoli and onion
  3. Pink Girl Dairy-free Smoothies
  4. Parfaits with oatmeal and cranberry jam
  5. Oatmeal with seeds and dried fruit
  6. Chocolate Banana Peanut Butter Smoothies
  7. Fried egg sandwiches

Lunch Meal Plan

  1. Lunch with family
  2. Sandwiches, carrots, yogurt
  3. Salad in a Jar
  4. Nachos and veggie sticks
  5. Loaded celery sticks,
  6. Green smoothies, pretzels, fruit
  7. Salad in a Jar

Dinner Meal Plan

  1. Popcorn and homemade ice cream
  2. BBQ Chicken, rice, and grilled carrots
  3. Beef roast with potatoes, onions, and carrots
  4. Slow Cooker Strawberry Peppercorn Chicken (recipe testing, coming soon)
  5. Beef Kofta Curry
  6. Cheeseburger Mac and Cheese, broccoli
  7. Fried Falafel over salad
