I’m back with a continuation of Operation: Eat Down the Freezer. The last 2 weeks have been a little crazy as we packed up and moved everything to a storage unit – including the freezer.

Right now we are in temporary housing until we figure out permanent housing. It’s an adventure of sorts. I liken it to a vacation you don’t have a home to go back to.

With all that, Operation: Eat Down the Freezer must go on because we packed everything in styrofoam coolers (I knew those would come in handy someday) then stacked them in the deep freezer with a 10 lb. block of dry ice. We didn’t lose a thing! Only 3 things were partially thawed – chicken thighs and 2 pounds of beef sausage.

Breakfast

  1. Munchkins and fruit
  2. Cereal
  3. Zucchini Chocolate Chip Baked Oatmeal
  4. Cherry Cheesecake Yogurt parfaits
  5. Zucchini Chocolate Chip Baked Oatmeal
  6. Peach Baked Oatmeal
  7. Pancakes with fruit compote

Lunch

  1. Grilled cheddar and turkey sandwiches, fruit, and veggies
  2. Sandwiches, celery sticks, tortilla chips
  3. Mixed greens salad with garbanzo beans and cranberries
  4. Celery sticks with peanut butter, sunflower seeds, and raisins, tortilla chips and salsa
  5. Grilled cheese sandwiches, baby carrots, cherries
  6. Soup and bread
  7. Dinner at church

Dinner

  1. Chicken thighs with white wine lemon butter sauce, mashed potatoes, asparagus
  2. Haystacks (rice, ground beef, cheese, lettuce, salsa, and nacho chips piled together)
  3. Dinner with community group
  4. Beef brisket, slow cooked with potatoes, tomatoes, onions, and garlic
  5. Spinach and Feta Chicken sausage, pasta, vegetable
  6. Salmon, rice and vegetable stirfry
  7. (Beef) sausage, potato, and pepper bake
