Sneak a little mushroom in there and they will never even know it.
I am always on the hunt for quick and easy meals. I absolutely love to cook but just like the majority of “family America”, my days are too busy and at the end of it I just want to get dinner on the table easily and with little hassle. Since we only purchase grassfed meats, the meat portion of our groceries can get a little pricy. I love to eat well and keep it frugal, and one great way to do that is to #SwapIt. Mushroom Beef Tacos are a great example of that.
What is #SwapIt? #SwapIt is when you swap out part of your meat for mushrooms. We are are so blessed to live near the Mushroom Capitol of the World. Because of this we have the freshest mushrooms money can buy, and that’s without paying a fortune for them. Mushrooms are a great way to cut the cost of meat at dinnertime and if you use them wisely the kids won’t even know they are there.
In fact, let me go ask the kids if they realized last week’s tacos had mushrooms in them.
Mushroom Beef Tacos
Ingredients
- Tacos:
- 1 pound lean burger
- 8 ounces crimini mushrooms
- Avocado Lime Sour Cream
- Tomatoes
- Salad Greens
- 1 teaspoon chili powder
- Cheese (optional)
- Taco shells of choice
- Avocado Lime Sour Cream:
- 2 ounces sour cream
- 1 avocado
- juice from 1/2 lime
- pinch of salt
Instructions
- Tacos:
- Finely mince mushrooms (blender or food processor are perfect)
- Fry burger, mushrooms, and chili powder until just cooked through.
- Chop tomatoes.
- Wash salad greens or wash and chop lettuce.
- Avocado Lime Sour Cream:
- Combine all ingredients and mix with hand mixer until mostly smooth.
- Making Tacos:
- Start with Avocado Lime Sour Cream so rest of ingredients “stick” to taco better.
- Layer on meat, vegetables, and/or cheese.
- Serve.

My Avocado Lime Sour Cream came into being because I was in a hurry and made my Avocado Lime Ranch dressing without all the ingredients. It ended up super thick and needed a new name since it didn’t have all the ingredients.
