Did you make a monthly meal plan last month? If so, how did it go? I found it helped me stick to making dinner a little better even if I didn’t follow it 100%. We still did a great job for the most part and only got off-track near the end of the month when we ended up running unexpected errands until later than dinner time.
And now for this month. Yeah, it’s almost the end of the month ALREADY. I totally fell apart on my meal plan, so here’s what I’ve got for the rest of the month.
February Breakfast Plan
I was going to change up breakfast a little bit this month because I feel zero motivation to actually eat eggs as often as I scheduled them. I much prefer a healthier muffin and want to work on making some protein packed breakfast muffins over the next few weeks.
- Egg Sandwiches
- No-Bake Peanut Power Granola (Recipe Coming)
- Oatmeal
- No-Bake Peanut Power Granola (Recipe Coming)
- Muffins and fruit – Avocado Blueberry Muffins (from Sweet Little Ones – minus nutmeg and cinnamon, with 1/2 the sugar), Whole Wheat Coconut Lime Muffins, Chocolate Banana Muffins (tweaking this recipe for more protein), and Pineapple Carrot Muffins
- Oatmeal and fruit
- Mexican Hot Chocolate Waffles
February Lunch Plan
- Sandwiches, Salads, and/or Soup
February Dinner Plan
Week 3
- Salmon, Butternut Squash and Cauliflower Mash, and garden salad
- Butternut Squash Apple Bisque with cornbread
- Cheeseburger Zucchini Mac and Cheese, Lemony Green Beans
Week 4
- Jarlsberg Mushroom Meatballs over Egg Noodles, vegetables
- Broccoli Mushroom Pasta with Chicken
- Easy Stuffed Peppers
- Gourmet Sausage and Peppers with Spicy Roasted Red Pepper Cream Sauce, Garden Salad
- Lemon Pepper Chicken Marsala, Roasted Vegetables
- Quinoa Burrito Bowl over Mixed Greens
- Lasagna Soup

Are you using fresh, frozen or canned vegetables in your dishes? I usually suggest fresh as my top priority to my clients. would you please say something about fresh versus frozen vegetables.

Fresh is my priority, but I am also about balancing affordability with eating well so if someone cannot afford fresh, by all means I encourage them to buy frozen. It is as close to fresh as you will get and still holds nutrition.
