Life goes so much better when I have a meal plan. We also eat much better when it isn’t a last minute dig through the cupboards and slap something together kind of dinner. So here’s my menu. I’m getting better….right? The month isn’t even half over so that’s a plus. Here is what we ate or are eating this month. You will see more soups being added in. My brain still lives in North East time where August heralds the end of summer with a few scorchers here and there but the days and nights starting to cool. Since we will be away a few days this month I only have 18 meals rather than the 5-6 per week I generally aim for.

18 (mostly) easy to make meals to give you meal planning inspiration

 

Week 1

Baked pasta with vegetable tomato sauce

Cream Chipped Beef over Toast

Salmon Burgers, Quinoa, Veggies, Peach Cobbler

Smoked Chicken Sausage and Veggies

Honey Chipotle Chicken and Broccoli over Wild Rice

Scallops with Avocado Tomato Salsa and Spicy Tomato Sauce, Red Miso Salmon, Salad

Week 2

Potato Leek Soup, Bread sticks

Fish Tacos with Pineapple Salsa and Coleslaw

BBQ Chicken, Mashed Potatoes and a veggie

Vegetable and Rice Stir fry

Week 3

Chili and cornbread

London Broil, baked potatoes, and veggies

Homemade pasta with white sauce and broccoli

Tuna Caesar Salad

Vegetarian Burgers, salad, and potato wedges

Week 4

Scallops, rice,  roasted summer veggies

Shepherd’s Pie

Curried Lentil Soup, Salad
