Meyer Lemon Blueberry Bars - A Delicious Lemon Bars Recipe

Crust

  • 2 cups flour
  • 1 cup chilled butter, unsalted
  • 1/2 cup sugar
  • 1 teaspoon salt

Topping

  • 1/2 cup Meyer lemon juice
  • 4 large eggs
  • 1 cup sugar
  • 1/4 cup flour
  • 1 tablespoon Meyer lemon zest
  • 1 teaspoon baking powder
  • 1 cup blueberries

Instructions

  1. Preheat oven to 350 degrees.

Crust

  1. Mix flour, sugar, and salt.
  2. Cut in butter and mix until thick dough forms.
  3. Press cough into a 10×8 baking dish.
  4. Bake for 15 minutes.

Topping

  1. Mix flour, baking powder, and sugar together.
  2. Mix lemon juice and a zest into dry ingredients.
  3. Beat eggs and mix into flour and lemon mixture.
  4. Pour over baked crust.
  5. Add blueberries to lemon mixture in an even layer.
  6. Bake for 20-25 minutes, until toothpick comes out mostly clean.
  7. Lemon mixture will still cling but you want the top to be set, not jiggly.
  8. Cool before cutting.
