I just realized I missed my meal planning post from last week! I am sorry about that. The time has been flying and it’s no wonder this week has been so offtrack with meals. Time to get back on budget and back on meal planning track.
Our last week has been consumed with buying a new car. I do love a new (to me) car, but I hate looking, buying, and most of all, spending the money. It has consumed most of our week. Couple that with a car biting the dust on the way to buy the new car and the other car in the shop for repairs, it’s been a not so fun adventure. Thankfully, we have replaced a vehicle and the other one needed repairs that we can “afford” to pay out, but it is making me aware of just how much I need to buckle down on the food budget. It’s been getting a little out of control with eating on the go.
Breakfast is always a hassle for me. I am back in the habit of taking too little time for it so back to making the breakfast pan with me in mind. Once upon a time I made a big batch of oatmeal and then packaged it in single serve containers to reheat. I’m back to that, except I can have son #1 make extra with breakfast one morning. I’ll schedule that for Monday. Son #2 can now make our homemade granola without much help so I will have him make that Tuesday. Then my husband is home Wednesday mornings so he can make pancakes.
Easy Breakfast Plan
- Oatmeal with dried fruits and seeds
- Homemade Granola, Fruit (Oatmeal for me)
- Pancakes, Bacon, Fruit
- Black Bean and Egg Quesadillas – I’ll double the batch and freeze some for next week.
- Homemade Granola, Fruit (Oatmeal for me)
Easy Lunch Plan
Lunch is another thing I hate to take time for. Are you seeing a pattern here? I truly lose all sense of time. Good thing my kids don’t! They seem to have this inner sensor that tells them when it is time to eat. It never fails. I get too focused on my project at hand and poof! time is gone. This weekend I am going to make up a batch of slow cooker veggie soup and package it in single serve containers, along with salad in a jar so my husband and I have easy lunches ready to go.
- Peanut butter and jelly, baby carrots, fruit (soup for me)
- Bean, cheese, and turkey quesadillas (salad for me)
- Veggie Soup and bread
- Yogurt, celery, baby carrots, pretzels (salad for me)
- Pita Pizza Melts, grapes, green pepper slices
Easy Dinner Plan
My whole family will be relieved with this week’s meal plan. Dinner has been hodge podge this week, and there was way too much eating out, which my kids didn’t mind. My husband and I are tired of cobbled together meals and on the run fast food type meals. I am planning to tweak a few of these recipes for the slow cooker to make life even easier and I will try to share my tweaks with you soon.
