Hawaiian Veggie Pulled Pork

Ingredients

  • 1 Pkg. MorningStar Farms® Veggie Pulled Pork
  • 1 c. fresh pineapple, diced
  • 1 c. pineapple juice
  • 3/4 c. ketchup
  • 1 & 1/2 tsp. fresh ginger, grated
  • 1 teaspoon crushed red pepper flakes (can use 1/2 for less heat)

Cabbage Topping

  • 1 c. purple cabbage, shredded
  • 1 cup pineapple juice

 

Instructions

  1. Put all ingredients in the Instant Pot.
  2. Stir.
  3. Seal lid and set on manual for 10 minutes. 
  4. When complete do quick pressure release. 

While veggie pulled pork is cooking –

  1. If serving as a stuffed portabello, lightly brush 4 portabellos with oil and grill on preheated grill. 
  2. Mix shredded cabbage and pineapple juice and set aside until dish is complete. 

Serve on a grilled portabello mushroom or bun or over rice. 

 

Notes

  1. Stove Top Version: Mix pineapple, pineapple juice, ketchup, ginger, and crushed red pepper in medium sauce pan. Cook over medium heat, stirring often, until pineapple is softened. Add veggie pulled pork and heat through to 165 degrees.
  2. Cook time includes time the pressure cooker comes up to pressure. 
  3. Calories are approximate and based on using a portabello. Will vary dependent on ketchup used.
