Summer is coming and I am so ready. I am pulling out all my favorite summery recipes like potato salad (mmhhm mmm), BBQ chicken (did you know taste buds can sing?!), and nice cold lemonade. And coleslaw. DO. NOT. FORGET. COLESLAW. I love coleslaw. My husband does not. Except this one. He loves this coleslaw. SCORE for me. It’s going to be a summer staple because it is so light and refreshing and gorgeous on the plate.
I discovered this perfectly amazing and easy coleslaw recipe because we were visiting friends for dinner the other night and I was taking sides to go with burgers. What better excuse than to make a yummy summer salad? However, I couldn’t go with my favorite potato salad and traditional coleslaw with a creamy dressing was out because she is on a really strict paleo style diet. I also wasn’t really in the mood for a green salad or the work that goes into it since my kids had testing the whole week.
I do love a good challenge when it comes to finding great tasting recipes that even my friends on special diets can enjoy, but I admit that I don’t generally think too hard about my ingredients otherwise.
I have an instinct for flavors and don’t really worry about dietary restrictions, except for tree nuts. Nuts can kill in this family. That being said, once I got the idea of what is and isn’t okay, it was pretty easy. The key to good food is quite often simple ingredients that pair beautifully. The flavors of honey, vinegar, lime, apple, and cabbage sing in harmony.

Ingredients
- 16 ounces cabbage/carrot slaw mix
- 10 ounces purple cabbage, shredded
- 2 cups apple, shredded or sliced thinly
- Juice from 2 limes
- 1/4 cup balsamic honey vinegar (I used Honey Ridge Farms)
- Pinch of kosher salt
Instructions
- Mix all ingredients.
- Refrigerate for several hours.
Yum, this sounds delicious! I love coleslaw, and finding versions that are paleo friendly is hard. I typically don’t like salad, so finding cold veggie sides that are good for bbq’s and picnics is sometimes difficult. Thanks for sharing your results!
