Ground Turkey Tater Tot Casserole

Tater tot casserole is a layered casserole with ground meat, frozen vegetables, cream of mushroom soup, and tater tots. This classic casserole has its roots in the Midwest and uses simple ingredients that make up the perfect comfort food for cold winter nights. 

Ingredients

  • 20 oz. 93% lean ground turkey
  • 1216 oz. frozen mixed vegetables
  • Double batch cream of mushroom soup (*see sub. below)
  • 32 oz. frozen tater tots**

Instructions

  1. Make cream of mushroom soup or mix together canned condensed mushroom soup and milk.
  2. Preheat oven to 375F.
  3. In medium frying pan, fry ground meat, crumbling into small pieces as it cooks. 
  4.  In 9×13 oven safe baking dish, smooth the cooked ground meat in an even layer. 
  5. Evenly layer frozen vegetables over meat. 
  6. Pour mushroom soup over vegetables evenly. 
  7. Arrange tater tots on top of casserole. 
  8. Bake for 45 minutes-1 hour, until heated through to 165F with a food thermometer, and tater tots are lightly browned.

Notes

  • *May substitute homemade cream of mushroom soup with (2) 10-11 oz. cans condensed cream of mushroom soup combined with (2) cans milk (using the mushroom soup cans).
  • **You may have a handful of tater tots left over. 
  • Prep time listed includes making homemade cream of mushroom soup.
