What are your New Year’s Resolutions? No matter what they are, how about you join us in resolving to eat healthy on a budget? We are entering week 7 of our frugal meal planning series and this week I want to to focus on how we can eat healthy, frugally, and on budget. How’s that for killing two birds with one stone? First we are meeting up with financial resolutions, and second, that infamous “eat healthy, get fit” resolution we try every year.
Breakfast Meal Plan
Day 1: Fruit and Yogurt Parfaits – yogurt and fresh or frozen fruit topped with homemade granola
Day 2: Taco Scrambled Eggs – eggs with salsa, black beans, and a small sprinkle of cheese
Day 3: Oatmeal topped with sunflower seeds, pumpkin seeds, raisins, and milk
Day 4: Portabella Swiss Egg with fresh fruit
Day 5: Dairy-free Fruit Smoothies and English muffins with peanut butter
Day 6: Applesauce Baked Oatmeal
Day 7: Crepes stuffed with cream cheese and grilled fruit
Lunch Meal Plan
Day 1: Pita layered with hummus, bell pepper slices, and cucumber, apple slices with peanut butter
Day 2: Cottage cheese (kids-sandwiches), fresh fruit, and seed and dried fruit mix
Day 3: English muffin pizzas, baby carrots, celery sticks, hummus
Day 4: Tuna Salad Sandwiches, fresh veggie sticks
Day 5: Strawberry Kale Chicken Salad Sandwiches with fresh fruit slices and veggies
Day 6: Leftover Chicken Veggie Soup
Day 7: Breakfast for Dinner – Ham and Egg Hash Brown Casserole
Dinner Meal Plan
Day 1: Ham, Bean, and Potato Soup with apple oat drop biscuits
Day 2: Mushroom and Beef Taco Salad – Tacos put over a salad
Day 3: Roast Chicken with mashed cauliflower and potatoes, and honey glazed carrots
Day 4: Not so Spicy Chicken Veggie Soup,
Day 5: Stuffed London Broil (You can stuff with spinach instead of mushrooms if you wish), baked sweet potatoes, and steamed broccoli
Day 6: Mushroom, Broccoli, and Tuna Quinoa
Day 7: Slow Cooked Curried Lentil Soup with salad
