It isn’t too often I have to say this but today I was making brownies and they flopped. I had already melted the butter and chocolate for my favorite brownie recipe (coming soon) when I realized I was out of eggs. Since I was already on a roll I decided to try substituting flax meal/water for the egg. I have done this as a partial substitute but never a full substitute and definitely not in my precious brownies. I should have known better. It was a flop of epic proportions.
In an attempt to rescue this brownie flop I spooned some of the congealed chocolate um, goo into a bowl and add a little heavy cream. After all, heavy cream makes everything better…or not. There was no rescuing this one. It baked rather oddly with the butter separating out and floating on top, and the rest a bubbling boiled disaster. I’m still wracking my brain to figure out how I can re-purpose it into something tasty and edible because right now it most looks like something you would find out in a pasture.
In update, refrigerating obviously did not give us a solution. It is hard with congealed butter blobbed across the top. It’s nastiness that I now need to get out of the pan. Maybe I’ll stick it back in the oven….
…or maybe not.
After sitting in the fridge overnight it actually tasted pretty good. Not visually appealing still but edible. It’s a strange mix between fudge and brownies. I’m not sure I intend to make it again but if you want to give it a try it isn’t too bad. I would cut the butter down though.
