You can make a meal plan, but do you stick to it? That’s the problem I have been having lately.
I lose track of time and then the question “What’s for dinner?” pops up and I have no idea. I need to make it a habit to pull meat from the freezer after dinner so it can thaw in the refrigerator overnight, because that’s half the battle. Once the meat is thawed the answer is pretty easy – whatever is getting made with the thawed meat. It would also help us eat better balanced meals since thrown together meals may or may not be all that balanced.
This week’s meal plan is all about keeping it easy and we just might be on a carb kick. Who doesn’t love their carbs?! If that’s you, I’m working on a slow cooker Enchilada Soup and I promise to see if I can make it diet friendly and still tasting fantastic.
