It’s crunch time in our household. The school year is almost over, which means a whole lot of wrapping up to do. Add to it that we are going to Mystic, CT for 3 days and I have a 3 day conference the same week, the next few weeks are going to be C-RA-ZY! This means I need quick and easy meals and definitely need a meal plan. (Confession: we have eaten on the run the last 4 nights and it is getting old and expensive.)
This week it is all about quick, easy, and healthy, because the last 4 days of eating on the run have also left me tired of pizza and subs.

Portabella Swiss Eggs & Fresh Fruit (Kids will have egg sandwiches)
