Thanksgiving Sweet Potatoes

favorite healthy sweet potato recipe

Ingredients

Scale
  • 6 medium-large sweet potatoes, peeled and diced
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, diced
  • 3 cinnamon sticks
  • 1 tablespoon crystallized ginger, diced
  • 1 pinch ground cloves
  • Pepper and salt to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Put potatoes in 9 x 13 dish.
  3. Add onions, garlic, and seasonings to top.
  4. Cover dish with glass lid or foil.
  5. Bake 45 minutes – 1 hour, or until soft.
  6. Remove cinnamon sticks and serve as is or mash before serving.
