Once upon a time there were three kids who helped their mom (me) make a quick and easy guacamole recipe. Made with all fresh ingredients, the guacamole was quite healthy and apparently delicious.

Boxing others out, a hand holding the bowl, and scraping the dish ensued in the 5 minutes we had freshly made guacamole in our house. In order to have guacamole more often, the kids debated on some dates, then officially declared Mondays ‘Mexican Food Monday’ from here on after.

Easy Guacamole

Ingredients

Scale
  • 2 California avocados
  • 2 tablespoons chopped red onion
  • 1 teaspoon diced jalapeño
  • 4 diced grape tomatoes
  • 1 diced clove garlic
  • Juice from 1 lime
  • 1/2 teaspoon salt

Instructions

  1. Mash avocados
  2. Add onion, jalapeño, tomato, garlic, lime juice, and salt.
  3. Mash together.

Holy guacamole! That guacamole was GONE in 5 minutes.

  1. This is just in time for me. I have to make a very large batch Saturday and then again on Sunday. My neices enjoy it! And the family! It is the same recipe that I make!! Yay! It is a 5 of 5!!
