Blood Orange Jalapeño Salmon

Ingredients

  • 16 oz. salmon
  • 1/2 cup Golden Door Blood Orange Marmalade
  • 12 tablespoons jalapeño, finely minced – 1 tablespoon if you want a hint of jalapeño, 2 if you want more heat
  • 1 tablespoon olive oil

Instructions

  1. Turn oven broiler on.
  2. Put 1-2 teaspoons olive oil in cast iron skillet or on baking tray and put it the oven to heat.
  3. Add 1 teaspoon olive oil to small frying pan on stovetop over medium heat.
  4. Add jalapeño to pan and cook until soft – up to 5 minutes.
  5. Add blood orange marmalade and cook over medium heat, stirring often.
  6. Once marmalade and jalapeño mixture thickens and is bubbly, turn off. (Approximately 5 minutes)
  7. Pull heated pan from oven and place fish on it, skin side down.
  8. Spoon marmalade sauce over top fish and spread to coat.
  9. Broil until done – 10-15 minutes, depending on salmon’s thickness.
