Easy Cauliflower Soup

Ingredients

  • 1 medium or large head cauliflower
  • 132 ounce stock (beef, chicken, or vegetable)
  • 1 medium onion (just larger than a baseball)
  • 3 cloves garlic/1 heaping tablespoon minced garlic
  • 1 tablespoon oil
  • 1 large pinch salt
  • 1 small pinch black pepper

Instructions

  1. Preheat oil in a stock pot over medium heat.
  2. Mince garlic and chop onion while oil is preheating.
  3. Add garlic and onion to pan, stirring frequently, until soft.
  4. While garlic and onion are softening, finely chop cauliflower.
  5. Add cauliflower, stock//broth, salt, and pepper to the pot.
  6. Cover and cook until cauliflower is soft, approximately 30-40 minutes.
  7. Stir frequently.
  8. Serve chunky or puree before serving.

NOTE: If you have a food processor, skip finely chopping the cauliflower and just throw big chunks of it in and let the processor do the work for you.
