Black Bean and Egg Quesadillas

Ingredients

  • 4 tortillas
  • 5 eggs
  • 1/3 cup black beans
  • Pinch of cilantro, dried or fresh
  • Butter or oil
  • Monterey Jack, cheddar, or Mexican cheese blend, approximately 1/4 cup

Instructions

  1. Heat oil or butter in pan.
  2. Add black beans and cilantro.
  3. Heath through.
  4. Beat eggs, then add to pan.
  5. Cook.

Meanwhile –

  1. Warm tortillas.
  2. Shred cheese over warmed tortillas.
  3. Add 1/4 the eggs to the center of each tortilla.
  4. Fold tortilla over itself and press closed.
