Our family loves asparagus. About the only way we don’t like asparagus is boiled to mush. A favorite way we have eaten it for a few years is roasted or grilled with a squeeze of lemon, salt, and pepper. My kids ask for asparagus every time they see it at the store. That is how much they enjoy it. However, our favorite lemon asparagus is going to have to move on over and make room for the new asparagus in town. Just as easy, this prosciutto wrapped asparagus stars on a dinner plate. It also is gracing my easy Valentine’s Day menu because it is THAT easy while seeming gourmet.
Prosciutto Wrapped Asparagus is the perfect side vegetable to accompany Chicken Thighs caramelized in red wine because it stands up to that easy gourmet dish and can be made while you finish off the chicken.

Ingredients
- 1 pound asparagus
- 1/4 pound prosciutto
- Parmesan (optional)
Instructions
- Set oven to broil.
- Wash and snap tough ends off asparagus.
- Wrap each piece of asparagus in prosciutto.
- Place on baking sheet.
- Broil for 6 – 7 minutes.
- Optional: Top with freshly shaved parmesan.
